Cheesy Spinach and Mint Zucchini Noodles

  • 1 Zucchini small to medium
  • 1 cup Soaked Cashews
  • 1 handful Spinach I used a spinach and kale mix
  • cup Nutritional Yeast
  • 3-4 leaves Fresh Mint
  • Salt to taste
  • Pepper to taste


  • Soak the cashews (for about 10 minutes). Set aside.
  • Spiralize zucchini and set aside.
  • Drain cashews and place in food processor/blender.
  • Place all other ingredients (except zucchini) in a food processor/blender.
  • Blend until creamy.
  • Pour sauce over zucchini noodles and serve!
  • Might need to add a little water depending on your food processor.
  • Optional: If you rather eat this meal hot you can sautee the zoodles and sauce of your choice in a saucepan for a couple of minutes.
